I know lunchtime is usually the most boring meal for me, and I'm guessing most of us are in the same boat. It's probably the most inconvenient meal - it's in the middle of the day when most of us have the least amount of time - regardless of if you're working or in school. Many times, a lack of nutritious food in the middle of the day can really make it hard to be at our best.
This veggie cream cheese wrap is the perfect solution. It only takes 10 minutes to make, it's nutritious and full of healthy fats and a good amount of protein, it can be made ahead of time, it's easy to eat - not messy, easy to take on the go, and tastes delicious. Seriously, the perfect lunch. So, if you're tired of the same old boring lunches and want to elevate your midday meal, give this Veggie Cream Cheese Wrap a try.
Tips for making the perfect Veggie Cream Cheese Wrap :
Tortilla
Be sure to properly warm up your tortilla to ensure it won’t break while you’re rolling your wrap.
My favorite gluten free tortilla brand is Siete Foods. They taste delicious and are very sturdy, if warmed up properly.
Cream Cheese
My favorite dairy free cream cheeses are Miyokos and Kite Hill. Both have great ingredients and actually taste very good.
To make it easier to spread onto your tortilla, let it slightly warm up on the counter while you prep your herb and veggies.
Crunchy Chili Oil
I use the Trader Joe’s version, but any crunchy chili oil will work.
When mixing it into cream cheese, try not to get too much of the oil. Too much oil will make your cream cheese spread too liquidy.
Italian Herb Seasoning
My favorite is the Member’s Mark brand of Italian Herb Seasoning from Sam’s Club - it comes in a glass grinder bottle. Although, and brand (or homemade) Italian Seasoning will work.
Cucumbers
Slice them thinly for the best texture.
If you don’t have mini cucumbers, any cucumber will work. You want about 3 inches of a regular sized cucumber.
Fresh Herbs
You can use any herbs you have on hand.
My favorite combination is cilanto, basil, and green onion.
Dill and mint also taste great.
You can add as much or as little herbs as you want. Totally up to preference.
Meal Prep
You can make this wrap ahead of time. Because there aren’t a lot of liquidy ingredients, it won’t get soggy.
Wrap it in unbleached parchment paper to make it easier to eat at work/school or on the go.
