Tips for Making This Spicy Tomato Garlic Pasta Sauce:
Peel the Tomato Skins:
Be sure to peel the tomato skins off before blending to ensure you get a nice smooth sauce.
Use a High-Speed Blender:
A high-speed blender is highly recommended, but a regular blender can work too. It may take longer in a regular blender, so you may want to blend in portions.
Soak or Boil the Cashews:
If you forget to soak the cashews, you can boil them. Soaking them is ideal, but boiling them for about 10 minutes can work in a pinch.
Freeze Leftovers:
This pasta sauce is very freezer-friendly. I like to freeze leftover sauce in large ice cube trays, which makes it much easier to reheat.

Spicy Tomato Garlic Pasta
Prep time: 5 minutes Cook time: 55 minutes Total time: 1 hour
ingredients:
4 roma tomatoes
1 large yellow onion
5 large garlic cloves
2 Tbsp avocado oil
1 Tbsp Italian seasoning
Black paper, to taste
Salt, to taste
1/2 cup cashews, soaked for at least 4 hours
2 Tbsp tomato paste
1 Tbsp Italian seasoning
1/2 Tbsp red crushed pepper (or to taste)
1 cup vegetable broth or water
Salt to taste
16oz pasta of choice
directions:
Preheat the oven to 400°F and line a baking sheet with parchment paper or a silicon mat.
Cut the tomatoes in half and the onion into quarters.
Place the tomatoes (face down), onions and garlic onto the lined baking sheet.
Add the oil and seasoning and toss until everything is well coated.
Bake for 30 minutes.
Remove from the oven. When cool enough to touch, peel off the tomato skins and discard.
Add all the roasted veggies along with cashews, tomato paste, seasonings, and vegetable broth/water to a high-speed blender.
Blend until smooth.
Heat up the sauce and mix in your cooked pasta.
Serve with fresh basil (optional).
