    • This recipe call for Medjool dates, which are larger than Noor dates. If you choose to use Noor dates instead, you’ll need to use more of them to acheive the desired consistency. I haven’t personally tried this recipe with Noor dates, so you may need to experiment a bit to get the right texture.

  • Avoid High Heat

    • It’s crucial to keep the heat at medium or below when making this date caramel. Higher heat can cause the caramel to burn and stick to the pot, ruining the texture and flavor.

  • Don’t Overcook

    • The date caramel will continue to thicken as it cools, as it’s important not to heat it for too long.

  • Use Nut Milk, Not Dairy

    • I’ve only ever used nut mil, never dairy milk. You’re welcome to experiment with other milk alternatives, but I can't vouch for the results of using dairy milk. I prefer almond milk for this recipe.

ingredients:

  • 10 Medjool dates, pitted

  • 2 tsp vanilla extract

  • 1 cup milk of choice

  • 1 1/2 Tbsp arrowroot flour

directions:

  1. Add the pitted Medjool dates, vanilla extract, and milk of choice to a blender. Blend until smooth.

  2. Transfer the date caramel mixture to a saucepan.

  3. Whisk in the arrowroot flour.

  4. Heat the mixture on medium low heat, stirring constantly, until it starts to thicken, about 5 minutes.

  5. Remove the saucepan from the heat and let the date caramel cool.
