White Bean Salad

ingredients:

  • 1/2 cup red onion, diced

  • Juice of 1 lime

  • 1/2 tsp salt

  • 1 can white beans of choice

  • 1/2 cup cucumber, diced

  • 1/4 cup sun dried tomatoes, chopped

  • 2 Tbsp extra virgin olive oil

  • 1/2 tsp dried oregano

  • 1/4 tsp dried thyme

  • 1/4 tsp chili flakes

  • 1/4 tsp garlic powder

  • 1/4 tsp dried sage

  • 1/3 cup fresh basil, chopped

directions:

  1. Marinate the onions. In a small bowl, combine the diced red onion, lime juice, and salt. Set aside to marinate while you prepare the other ingredients.

  2. Mix the bean salad. In a larger bowl, mix together the drained and rinsed white beans, diced cucumber, chopped sun-dried tomatoes, olive oil, oregano, thyme, chili flakes, garlic powder, sage, and fresh chopped basil.

  3. Combine and chill. Add the marinated onion mixture to the bean salad and toss to combine all ingredients. Refrigerate for at least 15 minutes to allow flavors to incorporate.
